“The Hanami is a sensible matched starter pair, and the value is in getting your cutter and your blender singing the same tune out of one box. The Japan 440C (Hitachi) comes up sharp and the 3D convex close is clean and quiet on both blades; I’d run the 6.0” cutting length as the all-round choice, with the 6.0” 30-tooth thinner sitting behind it for blending. That thinner is the part to be clear-eyed about: 30 V-form teeth lift a moderate, even ratio, so it softens weight lines and chases graduation beautifully, but it finishes rather than debulks — a dense, coarse head that needs real weight out will still want a coarser texturiser alongside it. The other honest note is the rainbow titanium coating: it looks superb, but a coating is the part that marks at the pivot and contact points over time, and 440C at this hardness rewards regular honing more than a cobalt grade would.
